Menu Plan: August 17-September 2

My grocery list was actually fairly short compared to normal, because we just have so much food in the house, especially in the freezer, from our garden and from others' gardens.  I'm loving all the veggies!

Menu Plan: August 3-16

The first batch of homemade salsa.  I got lazy, so I just threw everything in the blender instead of chopping it.  The texture was a bit different, but it tasted good!

We are starting to reap the fruits of our labor in the garden, and it's fun to be able to go out and pick some fresh veggies!  We tried our only remaining watermelon (we had 3, but the two smaller ones disappeared), and it was a little pale and immature tasting, but still good!  Here's the tentative plan for the first half of August...

Menu Plan: July 13-August 2

Sunday's dinner: Roasted chicken, roasted red potatoes, and green beans from the garden.  They all looked yummy!  In reality, the chicken was undercooked, even though I took its temperature (just not in the right places), and the green beans were still a little crunchy because I had the heat too high and they started smoking, so I took them off the burner.  It was my first time roasting a chicken, and I was a little more rushed than the usual Sunday dinner.  Lessons learned.  The potatoes were the best I've ever made them though, so at least one part was a success!

Now that we're back from vacation, I'm back to menu planning.  Since we were pretty close to mid-month anyways, I just went ahead and planned through the end of July.  It was a massive shopping trip, and I have a few busy days of chopping and prepping ahead of me, but it's nice to know that it's all done until next month!

Menu Plan: June 30-July 5

Some of our garden haul this weekend...

You might notice there's a little bit of overlap here from my last menu plan, which went through July 2.  (Okay, you probably won't notice, because you don't memorize my meal plans, but there is).  That's because I realized we only had a few more days between the end of that plan and our family vacation, so I decided to see if I could stretch what we had to cover the rest of the meals.  My mom also gave me a few fresh items that they weren't going to use before they left their house as well.  It actually was not that hard!  Meals that were already on the plan from last time are in parentheses.

We'll finish with eggs or cereal for breakfast on Monday, and head out, hopefully with a cleared out fridge/freezer, and with all of our grocery budget intact!

Menu Plan: June 16-July 2

Our most recent Sunday dinner included smothered chicken (chicken breast with mushrooms, onions, and mozzarella on top), garlic butter rice, pan seared broccoli from our garden, and a few snap peas from the garden as well.

The hardest part of having a garden, at least for me, is coming up with ways to use some of the produce immediately.  The stuff I can save, and use later on, is great!  The stuff that I need to use within a couple days sometimes stumps me, especially when I have the meals all set.  But I'm trying to be better about moving things around and using the stuff as we get it.  Good practice for if we ever get a CSA too (although with a garden this size, we certainly don't need one).

This time around I had to plan ahead a little bit, because we have a trip in the middle of the meal plan.  Not only did I want to lower costs for that trip by bringing most of our snacks and one of our meals, but I also wanted to have most of the meal prep done for when we get back.  I'll have laundry and life to catch up on, so who wants to spend extra time shopping and in the kitchen?  I think I managed to come up with a plan that will work.

One of the boys' favorite things to do is to play "kitchen", where they each get a baking sheet and various ingredients to mix together.  It's my way of letting them practice and get messy without actually being messy in the kitchen.  Eventually they'll move onto the real thing.

Menu Plan April 1-15

After taking a month or so off from sharing my menu plans, they're back on the blog!  And after going waaaaay over budget last month, mostly from impulse snack purchases, it's our family goal this month to get back on track.  So in addition to the three meals, I've planned out two snacks for each day so we can keep better track of our money there.  It actually wasn't much more work than the original menu plan, because we generally do one fruit and one oat-based snack, with a few variations.  It's more just keeping an accurate count of what we need to buy (and maybe not choosing the grocery store as our destination for family walks so often...)

Menu Plan February 1-15

We had a delicious spread for our Superbowl dinner, all homemade!  The cupcakes were from the freezer, as was the pizza crust, and the rest we did bit by bit over Saturday and Sunday, so it actually wasn't too hard.

Week 5 Challenge: Try 2 new whole foods.  We've tried a few new ones already.  First, along with our jalapeno poppers on Sunday, we had one Anaheim pepper.  That was good for the kids, who don't like spicy things, as it was more of a sweet pepper.  Last night we had a grapefruit after dinner.  Somehow I'd never tried one of those before.  I wasn't a fan, but Jonah and Hannah gobbled it up.
And finally, I attempted to make homemade yogurt using this recipe.  I think my temperatures were off, because by the time it was done, it was...basically milk.  Oh well.  I may try that again at some point.

Menu Plan January 16-31


Last week's Crockpot Orange Chicken was probably my favorite meal of the entire meal plan.  We liked it so much we're having it again this time around!  We're still doing the 100 Days of Real Food mini pledges, and I have to say, I was anticipating Week 3 being one of the more challenging ones.  But my husband pointed out that if we cooked one of the half chickens we got from a church member, we could spread that meat over our 3-4 meals, and just eat vegetarian for the rest of the time.  Problem solved!

To start out with, we're still on Week 2: Real beverages, with only honey or maple syrup as sweeteners.  I've discovered that coffee with whole milk and a spoonful of honey is pretty good, which is saying a lot, considering I used to be a sugar and fat-free vanilla creamer girl.

I have been keeping up on menu planning for the most part, but now I get to share again!  Starting next week, I am going to be trying the 100 Days of Real Food Mini-Pledges, where you get one real food challenge each week.  Some will be pretty easy for our family, like this first one to have at least 2 fruits/veggies with each meal, and some will be harder, like eating something local with every meal.  Should be an interesting challenge at any rate.  The first couple days this month are working on using up some of the leftover stuff in our house.  Here's the plan:

Menu Plan October 6-15

Because we were gone last week, I'm a bit late getting the menu posted for the first half of the month.  While we were at Jesse's conference, we did a mixture of eating out and eating in our hotel room.  I brought the crockpot along for two meals (beef and broccoli and a big batch of chili), and we also bought sandwich ingredients and snacks while we were there.  That helped us keep things a little bit cheaper, and it worked really well!

I made the beef and broccoli mix ahead of time and froze it, so it stayed nice and cold on the way there, and then I just stuck it in the fridge until the next day.  The chili came out of cans.  Easy peasy!

How I Menu Plan

I have been doing some form of menu planning ever since we got married, a little over seven years ago.  But my menu planning has evolved quite a bit since those days (think a list of three or so "helper" dinners, split between beef and chicken, with a random recipe thrown in).  Here's what I do now.  This might seem complicated, and it kind of is, but I know myself enough to know that if I don't write everything down, I'll miss something or forget to buy something, so this is what works for me right now.

The first thing I do is figure out the breakfasts, lunches, and dinners we will be eating for half of a month (the top half of the page above).  While I'm doing this, I check out our family calendar so I know if we have any appointments or special plans that might affect the food prep for the day.  Like Sunday lunches, for instance.  I know that we don't get home from church until lunch time, so I usually plan leftovers or sandwiches, or I know we'll end up going out to eat because the food isn't already done.

Once the meals are filled in, I list some of the repeated ingredients at the bottom of the page, and the amounts needed for each recipe they appear in.  This is the most recent addition to the menu plan, and it has helped me a ton in making sure we don't run out of eggs or cheese especially, but also all the other ingredients. It also lets me know if I'm going to end up using too much of a pricier ingredient, so I can adjust the menu if I need to.

After I list the repeated ingredients, I use another page to do my weekly prep lists.  This list is all the veggies I need to chop for each meal, meats to portion out, and extras to make, like granola or birthday cake.  Anything with a star next to it means something I can do right away and freeze.  I love this method of freezer cooking, because it means 2 hours or so of work in the first couple days, and a lot of "dump and cook" meals later on.

The third page of my menu plan, which I didn't take a picture of, is the actual shopping list.  I divide it into sections like the store - produce, meat, dairy, etc.  I copy the totals from my repeated ingredients section, and then add everything else I'll need.  We almost always have a second smaller grocery trip about a week in to get some of the fresh produce and eggs, so I write that down right away too.

It's complicated, yes.  It's not fancy and electronic, but I'm definitely a pen and paper list girl.  But this is what works for me.  It means we have food for every day planned out, plus the same rotation of snacks we usually have around.  It means I know what has to be done, and when.  And it saves my sanity when I can't remember where I put my shoes, much less how much cheese is supposed to be in tonight's dinner.

I went shopping on Sunday afternoon.  It was nice, because I got the luxury of going by myself, but it was crazy hectic, because everyone shops on the weekends.  I like shopping on weekday mornings much better.  The good news is that I'm on track to be under budget this month!  Yay!  I haven't been for the past few months, but I've been very intentional about it this month and it's working.
